“Homemade Egusi with Naija stockfish combo Loaded.
Introduction
Egusi soup is a beloved West African staple, especially in Nigeria. It’s made from ground egusi seeds (melon seeds) and a flavorful stock. The combination of ingredients varies across regions, but the result is always a creamy, hearty soup.
Ingredients
- Egusi Seeds (Melon Seeds): These oil-rich seeds are the star of the show. They’re coarsely ground to create a thick paste.
- Red Palm Oil: Adds color and richness.
- Meat: Choose your favorite—beef, goat, or smoked poultry.
- Stockfish: Dried fish with a robust flavor.
- Ground Crayfish: For depth and umami.
- Scotch Bonnet Pepper: Adds heat.
- Seasoning Cube: Enhances flavor.
- Red Onion: Chopped for the base.
Instructions
- Prepare the Egusi Paste:
- Mix ground egusi seeds with oil until every grain turns yellow.
- Stir-fry the mixture on low to medium heat for about 10 minutes.
- Create the Stock:
- Infuse beef (or your preferred meat) with red onion and ground crayfish.
- Once the stock is ready, add the roasted stockfish and smoked fish.
- Combine Everything:
- Gradually add the meat/fish stock to the egusi paste while stirring.
- Allow the flavors to meld for about 10 minutes.
Serving Suggestions
- Enjoy egusi soup with pounded yam, fufu, or rice.
- Top it off with fresh greens like spinach or ugu leaves.
Remember, each spoonful is a taste of Nigerian heritage! 🌿🥣
